Pork chops with Dijon sauce and mashed potatoes

Pork chops with Dijon sauce and mashed potatoes is a relatively easy recipe to make when you are in the mood for something tasty and delicious.

A warm and delicious recipe that will warm your body and make you happy.

Ingredients

2 Pork Chops
4 tbsp olive oil
2 tbsp butter
2+3 garlic cloves
Fresh thyme
2 tsp dijon mustard
2-3 shallots
2 dl white wine
1-2 dl cream
1-2 dl vegetable stock
Salt
Pepper

Instructions

Pork Chops

Add 2 tbsp of olive oil and 1 tbsp of butter to a cast iron pan or similarly. Let the butter and oil melt together until it becomes golden.

Add the meat, thyme, and 1-2 garlic cloves to the pan and cook the pork chops for 3-4 mins on both sides. Cover the pork chops with the butter and olive oil – use a spoon.

Place the pan into a pre-heated oven, 200 Celsius (400 Fahrenheit) and cook for 7-8 mins.

Take the pan out of the oven and set the pork chops aside for cooling.

Dijon Sauce:

Turn the pan back on and add 2 tbsp and 1 tbsp of butter to the pan and let it melt together until it turns golden brown. Add chopped shallots and chopped garlic to the pan and cook it for 7-8 mins, or until the shallots and garlic become soft.

Add the white wine to the pan and turn the heat up again. Burn the alcohol away.

Reduce the sauce.

Add the vegetable stock to the pan and reduce the sauce to half.

Add the cream and reduce the sauce to half again.

If the sauce is to thin simply use cornstarch to make it thicker.

Serve with mashed potatoes.
