Barley with yogurt and apples

Barley with yogurt and apples has become a wonderful addition to my repertoire of breakfast recipes. I love barley, but I never ever thought about having it for breakfast before!

I discovered some time ago that it was possible to have barley for breakfast, and better yet, that it actually tasted good. This has been wonderful news for me since I’m constantly trying to find new ideas for my breakfast. I don’t want to be eating the same boring thing every day, and why should I. I mean, we don’t eat the same for dinner every night do we? why should it be any different for our breakfast? And surprisingly, there are actually a number of different and healthy recipes that we can make in the morning.

The recipe that I discovered some time ago is more simple that this one, but I have chosen to add a couple of ingredients to the recipe to give it a little more freshness and taste to it. Btw, this is the perfect recipe if you have some leftover barley from the day before. Just mix the ingredients together and enjoy!

Ingredients

1 cup (2.5 dl) barley cooked the day before.
1 cup (2.5 dl) yogurt natural
1 tsp of vanilla powder
1 tsp of cinnamon
Topping:
Apple
Banana
Muesli

Instructions

Cook the barley the day before and place it in the fridge.

In the morning, take the barley out and cover it with yogurt natural. Mix in vanilla powder and cinnamon to taste.

Put your favorite topping on top (apple, banana, and muesli).

It’s as easy as that!
